Yummy Fried Chicken!!!

With 4th of July festivities right around the corner, what better time to think about what foods you are going to celebrate with!!! We are going all American! Fried chicken, potato salad, cole slaw and some patriotic desserts!!! Today I am going to show you how to make fried chicken that no only is DELICIOUS! But it also stretches your food so it helps with cost! Great combo right?! Here we go!!!

You Will Need:
For Batter:
  1. 1/2C of fresh finely grated Parmesan cheese. (Or you can get regular grated Parmesan cheese in a bag or bottle and run it through your food processor to make it fine grain if you have a processor.)
  2. 1C Italian bread crumbs (I like the Progresso Italian Bread Crumbs.)
  3. 2 Eggs Whisked.
Chicken:
  1. 2 Large chicken breasts.
  2. Olive oil
  3. skillet or large frying pan.

Start by tenderizing chicken breasts till beaten to about 1/2" thick. Then cut each breast into three equal sized pieces. (From two breasts you should end up with six strips of chicken. Fabulous isn't it! You can get six servings out of 2 chicken breasts!!!)

This is one breast tenderized and sliced into 3's.
This is about how it should look like pounded to 1/2" thick.
After chicken has been prepared, set it aside.

Next to make the batter, measure out 1/2 cup of finely grated Parmesan cheese. Or grab some grated Parmesan cheese and throw it into your food processor and grind till the is a nice fine consistency. (measure the Parmesan out after it has been grinded.)

This is how the consistency should look.
Add Parmesan cheese to a bowl big enough to batter chicken in.

Next add your 1C of bread crumbs to the bowl as well.
Then mix the Parmesan and bread crumbs together well with a whisk or your hand.
Set aside.

In separate bowl, whisk two eggs.
Now you are ready to batter your chicken!

First dip chicken breasts in breadcrumb mixture.
Make sure both sides are covered well.

Now dip chicken into eggs on both sides.
Then re-dip the chicken again into bread crumbs. make sure well covered on both sides. (but not too thick or your will get a mouth full of bread. It should just be a light even covering.
Then place on platter and salt and pepper to taste.
Cover the bottom of pan with olive oil. Just enough to cover the bottom of pan, not too thick just a nice light coting.
It works best to put about 3-4 tbs into the pan and then lift the pan and lean from side to side till pan is coated. you can add 1-2tbs more if needed to coat pan completely.
Heat oil to 300 degrees, if you are using a skillet, or to medium heat if you are cooking in a pan on a stove top.
Cook for 3 to 4 minutes-watching that the underside does not burn. If skillet is too hot, turn down the heat one notch.

Flip and cook 3-4 more minutes.
Remove from heat and set on a platter lined with paper towels. This allows the grease to absorb into the paper towels so that the chicken doesn't get soggy. Now just let it cool and enjoy! You can check one of the pieces to make sure it is done by cutting a small slice in the center. If there is no pink, it's done!
I also love to make more of this than I need for a meal, that way I can vacuum seal it and freeze it! If you freeze these you can make wonderful little meals by heating your oven to 400 degrees and cooking on a cookie sheet for 9-10 minutes on one side and then flip and cook another 9-10 Min's.
Then they are ready to serve!!!

Things That Inspire!

I just LOVE material shopping! I don't know what there is about it, but there is something I LOVE about running to the store to buy things that allow me to be creative!

While out my daughter saw some princess material and begged me to make her and her sister a dress. "Why not?" I said to myself. I had never made dresses before, but I could do that for her. It went so well I am seriously considering selling these, because now I have people asking for them! Let me know what you think!!!

Update

Hey Everyone, So sorry for the lack of posts lately! I am missing you all! :) My mother was admitted to the ER on Tuesday for a massive infection...she is doing lots better now, but has totally thrown me for a loop! Hopefully I will be back and posting by this weekend! I would sure love prayers for her from those of you who pray :) thanks!

Happy Daddy Day!


To My Darling Husband, I hope your day is the happiest ever! Filled with three girls that couldn't possibly love you more. Forever yours :)

Happy Father's Day also to my wonderful daddy! You were always strong when I needed you and a big teddy bear when I just needed love. You are a perfect example of what a father should be and I'm so blessed to have you in my life :)

FABULOUSLY FUN FATHERS DAY CARDS!

 
Sorry this is so last minute, but I HAD to share with you what we did for Fathers Day today!!!!

You will need:
  1. Construction paper.
  2. Scissors.
  3. Elmer's glue
  4. crayons.

Take Whatever color you would like for the shirt and lay it flat on table.
Fold paper in half vertically.
Open back up.
Fold left side in meeting at center crease and then follow with right side.
 
open back up again.
Fold left and right top corners to meet at outside crease lines.
 
Fold triangles inward and and then fold down.
 
This makes the sleeves.
Flip over.
 
Turn upside down.
Make 3/4 inch fold.
Turn back over. and fold corners meeting the points in the center. this makes the collar.
 
Fold in half slipping the sleeves under the collar.
 
Secure by creasing bottom seam.
Now for the tie!

Cut a 1/2 thick by 8 inch long strip of construction paper.
 
tie in knot at top. 
trim top.
 Trim bottom to point
Cut another colored strip of construction paper, about 1 inch thick.
cut into small strips. these will be for the ties stripes!
glue stripes diagonally on tie.
trim off over hang.
Glue tie to shirt making sure to slip under collar for security.

Now for the card base. Take a piece of consturction paper and fold in half, this time horizontally.
Glue finished shirt to card.
Now write inside and outside, decorate how you would like and your done!
